Ingredients
  

  • 400 g cottage cheese
  • 4 large eggs for structure and protein
  • 1/2 cup molasses sugar adds sweetness and rich flavor
  • 3/4 cup einkorn flour higher in protein and adds a nutty flavor
  • 1 teaspoon vanilla extract for flavor enhancement
  • 1 teaspoon baking powder helps the cake rise
  • Pinch of salt enhances flavor

Optional Additions:

  • 1/2 cup rolled oats adds texture and fiber, optional
  • 1/4 cup chopped nuts for extra protein and crunch, optional
  • raisins for topping, such as blueberries or sliced strawberries, optional

Instructions
 

Preheat Oven and Prepare Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch springform pan or line it with parchment paper.

Blend the Cottage Cheese:

  • In a blender or food processor, blend the cottage cheese until smooth. This step is crucial to eliminate any lumps and ensure a smooth texture.

Mix Ingredients:

  • In a large mixing bowl, whisk the eggs and molasses sugar until the mixture is fluffy and light in color.
  • Add the smoothed cottage cheese and vanilla extract to the eggs and sugar, mixing until well combined.
  • In a separate bowl, mix the einkorn flour, baking powder, and salt. Gradually fold this into the wet mixture. If using, stir in rolled oats and chopped nuts.

Bake the Cake:

  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • If desired, arrange raisins on top of the batter before baking.
  • Bake for 40-50 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.

Cool and Serve:

  • Allow the cake to cool in the pan for about 10 minutes, then release from the springform and cool completely on a wire rack.
